On Saturday I was woke up by thunderstorm , and couldn’t get back to full sleep after that. The gloomy and pouring day dawned upon Boston harbor. I dragged myself out of the bed, since this very Saturday, when it rained cats and dogs, and when the best would be to sit at home at the fireplace with a book and a glass of wine, we had to do some errands in Boston. Ugh! Well, I was exhausted by driving on rainy highways, and was thinking about something fast and easy for dinner. Amazingly, the muse of cooking suddenly drifted upon me. That’s how this recipe was born, literally out of the blue.
What you need:
2 medium fillets of white fish (tilapia, trout, etc.)
2 celery stalks, sliced diagonally
2 yellow onions, sliced in rings
8 pearl onions, peeled & whole
Parsley, finely chopped
Dill, dried (or fresh, also chopped)
2-3 cloves garlic, minced
1 tbsp butter
Lemon juice
White pepper
Salt
1/2 cup water
1 red potato, peeled, cut in chunks
Method:
Rinse fillets in cold water and put on a plate lined with paper towels, sprinkle with salt and white pepper, generously.
My observation tells me that simply cooked rice would probably make a better side dish, but red potato was also very good.
Fast, pretty simple (isn’t it?), healthy. What about the taste? Arrange this fish as I said, take a bite – and you are in Heaven!
